Singapore's dining scene has received a major boost with the arrival of three-Michelin-starred chef Paul Pairet. Renowned for his groundbreaking Ultraviolet in Shanghai and modern classics like Polux and Mr & Mrs Bund, Pairet has made his Singapore debut at WEAVE in Resorts World Sentosa with two exciting concepts: the casual French bistro Moutarde and the nostalgic dessert bar Sundae Royale.

Opened in late 2025, these side-by-side venues offer the perfect combination. Savoury French comfort food followed by indulgent sweets, all in one convenient location on Sentosa Island.

Moutarde: A Modern Twist on the Classic French Bistro

Moutarde (French for "mustard") is all about hearty, shareable French dining with a contemporary edge. Inspired by British carving trolleys and French rotisserie traditions, the menu centres on whole cuts of meat grilled or roasted to perfection, served with classic bistro sides and an array of house-made mustards.

The atmosphere is relaxed and convivial. Think warm Parisian bistro energy with a spacious layout, an expansive bar, a maturation room for aged proteins, and a tall wine cellar. It's family-friendly by day (ideal for post-Universal Studios lunches) and lively in the evenings for dinners with friends.

Standout dishes include:

- Eggs Mayo (SGD $12): Jammy eggs with sherry soy aioli and crispy garlic croutons.

- Wood-Oven Roasted Prime Rib or Leg of Lamb (from SGD $30–$38): Carved tableside with customisable seasonings.

- Char-Grilled Seabass Vierge (SGD $22): Perfectly cooked with a flavourful herb dressing.

- Classics like beef tartare, grilled salmon béarnaise, and a showstopping praline soufflé.

Daily-rotating carvery options keep things fresh. Think Australian prime rib one day, New Zealand lamb or XXL turbot the next.

Sundae Royale: Retro Desserts That Hit the Sweet Spot

Right next door, Sundae Royale is a playful throwback to classic ice cream parlours with mint-green retro décor. This premium dessert spot specialises in elaborate sundaes (10 varieties priced SGD $8–$14), featuring flavours like pistachio-raspberry, milk and cereal, and more creative combinations.

Don't stop there. Try the Basque cheesecake (SGD $12), churros (SGD $6), or indulgent sweet French toasts (SGD $14) topped with ice cream and sauces. It's the ideal way to end your meal at Moutarde or a fun standalone treat.
